Not too long ago, I noticed a reference to Brown Sugar cookies that my cousin Carole had posted - so curious, I asked for the recipe. This was her Grandmother's recipe, so you know that it's one of those oldies but goodies. Thanks for sharing this Carole!
Brown Sugar Cookies
Ingredients:
1/2 C butter
1 1/2 C brown sugar
2 eggs
3 Tbsp heavy whipping cream
1 tsp vanilla
1/4 tsp salt
1/2 C chopped pecans or walnuts (optional)
1 tsp baking powder
2 1/2 C flour
Directions:
Cream butter and sugar together. Add eggs and beat 2 minutes. Add the remaining ingredients and stir in by hand. Drop by spoonfuls onto a greased cookie sheet and bake at 350 degrees for 10 - 12 minutes.

Butterscotch Oatmeal Bars
If you like butterscotch, you’ll love these bars, they're just kind of nice and soft and taste so satisfying to the sweet tooth.
Butterscotch Oatmeal Bars
1 1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 cup butter, softened
3/4 cup white sugar
3/4 cup packed brown sugar
2 eggs
1 teaspoon vanilla or grated peel of one orange
3 cups quick cooking oats
2 cups butterscotch chips
1 teaspoon baking soda

Preheat oven to 375 degrees F (190 degrees C). Combine flour, baking soda, and cinnamon in small bowl. Beat butter, sugar, brown sugar, eggs and vanilla in large bowl. Gradually beat in flour mixture. Stir in oats and butterscotch chips. Spread dough into greased 15 x 10 inch pan. Bake 18-20 minutes or until very lightly browned.
Cranberry White Chocolate Oatmeal Cookies
This recipe should have come with a warning label, these are just simply one of the best recipes ever! I’ve had tons of requests for this recipe, the cranberries and white chips just add just a nice twist to an already yummy treat. Enjoy!!!
Cranberry White Chocolate Oatmeal Cookies
adapted from recipe on the back of Craisins
Ingredients:
3/4 c. butter, softened
2/3 c. packed dark brown sugar
a little more than 1 1/2 c. oatmeal
1 1/2 c. all purpose flour
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp salt
2 large eggs
1 tsp vanilla extract
2/3 c. dried cranberries
2/3 c. white chocolate chips
Directions:
-Preheat oven to 375 degrees and line two baking sheets with parchment.
-In bowl of stand mixer, combine butter and brown sugar and beat on medium high until light and fluffy in texture and color, about 3 minutes, while you gather other ingredients.
-In large bowl, combine oatmeal, flour, baking soda, cinnamon, and salt, stirring to combine.
-To butter and sugar add eggs, one at a time, beating to combine well after each addition, then add vanilla.
-Stop mixer, scrape down the sides of the bowl and turn back on lowest setting.
-Add oatmeal mixture, then cranberries and white chocolate, beating just until barely combined.
-Remove bowl from stand mixer and bring over to baking sheets.
-Best way to do this is with your fingers (albeit messy) - pick up loose balls of dough about 2 to 2.5 inches in diameter and place onto baking sheets at least 2 inches apart (I place 11 cookies on each sheet, dividing dough into 22 cookies total).
-If you have leftover cranberries and white chocolatre chips, top cookies with a couple of each.
-Place in preheated oven and bake for exactly 10 minutes.
-Remove from oven, cookies will be slightly golden around edges and middles look a bit underdone.
-Let cool 5 minutes on cookies sheets and then place on wire racks to cool completely before serving.

So years ago, my cousin gave me this recipe and since then it's become one of the family favorites. As far as I'm concerned, cookies should be soft and moist - unless of course we're talking about shortbread. Those are the only type of cookies that I think shouldn't be soft.

2 tsp. vanilla extract

1 package chocolate chips
1 package butterscotch chips
2 small boxes french vanilla pudding mix (instant)
2 tsp salt
2 tsp baking soda
5 C. flour
Directions:
Cream sugar and margarine together, add the eggs and vanilla extract. In a separate bowl combine all of your dry ingredients and stir into the sugar mixture. Add your chips and drop by spponfuls onto a baking sheet, bake at 375 degrees for 11 min. Don't forget to taste fresh out of the oven.....Yumm!
